Commander’s Salad
(Serves 4 as a side dish)
Our most popular side salad, this is a colorful combination of mixed salad greens, crisp crumbled bacon, Parmesan cheese, hard-cooked eggs and crunchy croutons, all tossed in our special Commander’s dressing. Use the freshest seasonal salad greens – we use leaf lettuce, field lettuce, Bibb, romaine, oak leaf, endive and watercress.
4 cups mixed salad greens
4 tbsp. crumbled crisp bacon
4 tbsp. freshly grated Parmesan cheese
1 cup croutons
Commander’s Dressing
Makes 2 cups
11/2 cups salad oil
1 egg, at room temperature
1/3 tsp. salt
1/2 tsp. freshly cracked peppercorns
¼ cup white vinegar
3 tbsp. minced onions
Garnish
2 hard-cooked eggs, halved
Wash and dry greens and tear into bite-size pieces. In a salad bowl combine greens, bacon, cheese and croutons.
Put ½ cup oil and the remaining dressing ingredients in a blender. Cover and blend on low speed. Remove cover and gradually blend in remaining oil.
To serve: Pour 8 tablespoons dressing over salad and toss. Divide onto individual salad plates or into bowls, and garnish each serving with hard-cooked egg half.

Hey there, I was reading your article and I just wanted to say thank you for putting out such excellent content. There is so much nonsense on the internet these days its hard to find anything worthwhile. I actually have cooked this recipe before, I got this book last month on recommendation from a friend http://ninjahq.com/go/cookingrecipes and it turned out quite nice! I’m very eager to try your variation of it though, it looks fantastic. I think you might enjoy those recipes, they’re very good. Thanks for the article and tips.
