Hibiscus Martini

1.5 ounce Hibis­cus Tea (see below)
1.5 ounce Bom­bay Sap­phire
1.5 ounce fresh lime juice
1/2 ounce Sim­ple Syrup

Place ice in a mar­tini glass to chill and set aside.  Com­bine ingre­di­ents in a cock­tail shaker with ice and shake well.  Dis­card the ice in the mar­tini glass and strain the drink into a chilled mar­tini glass.  Gar­nish with a lime wheel.

Hibis­cus Tea:
8 cups dried Jamaican hibis­cus flow­ers (It’s very impor­tant to get this kind as oth­ers are poi­so­nous — you can find these at Whole Foods and Latin mar­kets)
4 cups water
1 cup sugar

Place the flow­ers and water in a pot and bring to a boil over medium high heat.  Shut off the heat and let tea steep for 5 min­utes.  Strain and add the sugar.
