Sweetened Vanilla Whipped Cream
If possible, try to find cream that has not been ultra pasteurized.
Makes 1 cup
1/2 cup cold heavy cream
1 tablespoon confectioners’ sugar
1/4 teaspoon pure vanilla extract
Place the cream in a medium bowl and beat with an electric mixer at medium speed or by hand until thick and frothy. Add the sugar and vanilla and continue to beat until soft peaks form, being careful not to over mix. Though the cream will hold its peaks for several hours in the refrigerator, you should use it immediately.
