Sweetened Vanilla Whipped Cream

If pos­si­ble, try to find cream that has not been ultra pasteurized.

Makes 1 cup

1/2 cup cold heavy cream
1 table­spoon con­fec­tion­ers’ sugar
1/4 tea­spoon pure vanilla extract

Place the cream in a medium bowl and beat with an elec­tric mixer at medium speed or by hand until thick and frothy.  Add the sugar and vanilla and con­tinue to beat until soft peaks form, being care­ful not to over mix.  Though the cream will hold its peaks for sev­eral hours in the refrig­er­a­tor, you should use it immediately.
