The Harvey Canal

So Mark Mans­field (our bar man­ager at Commander’s Palace) and I were dis­cussing things that are under­uti­lized (or down­right maligned) on the back bar.  The con­ver­sa­tion turned, nat­u­rally, to those lovely long-necked bot­tles of Gal­liano.  I started expound­ing upon the virtues of herbal liqueurs, and Mark said we should come up with a sum­mer cock­tail using Gal­liano.  So I thought we should riff on the clas­sic Har­vey Wall­banger, but find a way to make it locally rel­e­vant.  In an homage to our bar chef, Fer­rel Dugas (she is SO West Bank proud—I am mak­ing a “w” with each hand right now), we decided to cre­ate the Har­vey Canal.  Mark sug­gested using Abso­lut New Orleans vodka—genius!

So we pitched the idea to Fer­rel and started mak­ing some cock­tails.  When she fin­ished throw­ing things at me for mak­ing fun of her ‘hood, she cre­ated a recipe and made it DELICIOUS!  Mark and I decided we would just take all the credit.

Here is the recipe:

½ ounce Liquore Gal­liano L’Autentico
1 ½ ounce Abso­lut New Orleans vodka
1 ounce fresh sour mix
2 dashes of cherry bit­ters
Splash of fresh-squeezed orange juice

Shake and strain over crushed ice.  This drink needs the crushed ice to dilute it a bit, so do not sub­sti­tute cubes.  It looks great in a white wine glass with a mint leaf and a slice of orange.DSC04871

    Uncle Tobys Honey Lemon­ade Recipe: 1/2 gal­lon warm water, 1/2 cup honey, 1/4 cup sugar, 1/2 cup fresh lemon juice. Just mix it all with your hands (their warmth will dis­olve the honey and sugar) and pour mix­ture into a gal­lon con­tainer filled 3/4 with ice. You can even add a sprig of lavan­der or a slice of fresh gin­ger for a lit­tle extra spice.
