The Harvey Canal
So Mark Mansfield (our bar manager at Commander’s Palace) and I were discussing things that are underutilized (or downright maligned) on the back bar. The conversation turned, naturally, to those lovely long-necked bottles of Galliano. I started expounding upon the virtues of herbal liqueurs, and Mark said we should come up with a summer cocktail using Galliano. So I thought we should riff on the classic Harvey Wallbanger, but find a way to make it locally relevant. In an homage to our bar chef, Ferrel Dugas (she is SO West Bank proud—I am making a “w” with each hand right now), we decided to create the Harvey Canal. Mark suggested using Absolut New Orleans vodka—genius!
So we pitched the idea to Ferrel and started making some cocktails. When she finished throwing things at me for making fun of her ‘hood, she created a recipe and made it DELICIOUS! Mark and I decided we would just take all the credit.
Here is the recipe:
½ ounce Liquore Galliano L’Autentico
1 ½ ounce Absolut New Orleans vodka
1 ounce fresh sour mix
2 dashes of cherry bitters
Splash of fresh-squeezed orange juice
Shake and strain over crushed ice. This drink needs the crushed ice to dilute it a bit, so do not substitute cubes. It looks great in a white wine glass with a mint leaf and a slice of orange.

Uncle Tobys Honey Lemonade Recipe: 1/2 gallon warm water, 1/2 cup honey, 1/4 cup sugar, 1/2 cup fresh lemon juice. Just mix it all with your hands (their warmth will disolve the honey and sugar) and pour mixture into a gallon container filled 3/4 with ice. You can even add a sprig of lavander or a slice of fresh ginger for a little extra spice.
