Ramos Gin Fizz
2 ounces half and half
1 1/2 ounce gin
1/2 ounce simple syrup
2 teaspoons fresh lemon juice
1 large egg white
1 dash orange flower extract
1 drop vanilla extract
Combine all ingredients in a cocktail shake and shake vigorously until frothy. Strain into a rocks glass (without ice) and serve immediately. -
Singapore Sling
1 ½ oz Tanqueray gin
½ oz cherry brandy
¼ oz Cointreau
¼ oz Benedictine
2 oz pineapple juice
1 dash of Angostura bitters
2 dashes grenadine
½ oz fresh lime juice
Splash of club soda
Orange slice, for garnish
Lime slice, for garnish
Maraschino cherry, for garnish -

The Bali Hai Fog Cutter *
Makes 4 (or more) drinks
8 ounces fresh orange juice
6 ounces fresh lime juice
6 ounces simple syrup
4 ounces light rum
4 ounces dark rum
4 ounces brandy
4 ounces gin
1/4 ounce almond extract
Combine all ingredients in a pitcher with ice and mix. Serve in tiki glasses or tall glasses.
