  1. Vieux Carre Cocktail

    1 ounce rye whiskey
    1 ounce cognac
    1 ounce sweet ver­mouth
    2 dashes Peychaud’s bit­ters
    2 dashes Angos­tura bit­ters
    1/2 tea­spoon Bene­dic­tine
    Com­bine all ingre­di­ents in a cock­tail shaker with ice and shake vig­or­ously.  Strain into a chilled mar­tini glass and serve immediately.

  2. Chris Hannah’s “The Accourtrement”

    In a cock­tail shaker com­bine…
    2 oz Cal­va­dos
    ¾ oz Strega
    ½ oz Cre­ole Shrubb
    ¼ oz fresh lemon juice
    2 dashes of Peychaud’s bit­ters.
    Com­bine ingre­di­ents in a cock­tail shaker and shake well.  Strain into a chilled cock­tail glass.  Gar­nish with a cherry.

    1  1/2 ounces Old New Orleans Rum
    Juice of 1 lime wedge
    3 dashes Peychaud’s bit­ters
    1/4 ounce Sim­ple Syrup
    Secret Ingre­di­ent (when you dis­cover it)
    Club Soda
    Lime wedge, for gar­nish

    The Offi­cial cock­tail of New Orleans and the State of Louisiana
    1 table­spoon Herb­saint or Absinthe
    1 ½ ounces rye whiskey, prefer­ably Old Over­holt or Saz­erac rye
    ½ tea­spoon Sim­ple Syrup
    4 to 5 dashes Peychaud’s bit­ters
    2 dashes Angos­tura bit­ters
    1 lemon twist with the white pith removed, for gar­nish
    Pour the Herbsaint/Absinthe into a rocks glass and swirl to

  6. The Oops

    1 oz Maker’s Mark
    1 oz Grand Marnier
    1/2 oz fresh lime juice
    3 dashes Peychaud’s bit­ters
    1/4 oz Cherry Heer­ing
    Chill a mar­tini glass.  Shake all ingre­di­ents in a cock­tail shaker and strain into the mar­tini glass.  Gar­nish with an orange peel.
